Vegan Sunshine Rainbow Salad

We are absolutely loving the hot weather here at the sparklenest. We are lucky to live in an old stone cottage which stays pretty cool most of the time, so we can enjoy the outdoors and come in when it gets too warm!

Its far too warm to be cooking this week though, so last night I made a very simple Vegan Sunshine Rainbow Salad. Here is the recipe..

  • 200g spelt pasta
  • 3 tomatoes
  • 1/2 cucumber
  • 1 red pepper
  • 1 orange pepper
  • 1 small tin of sweetcorn
  • 2 tablespoons of mayola (vegan mayonnaise)

Cook and drain the pasta, chop all the veg, and mix together! Simple, delicious, and enough for lunch the next day. I served this up with some spicy bean burgers. We ate it al fresco with a chilled glass of wine standing up in the kitchen as quickly as possible before munchkin complained too much about us eating…! But it was still delicious!

I hope you’re enjoying the sunshine xx

Your cottage sounds lovely Becky. Is it warm in the winter?

It’s soooo cold in winter! Especially the kitchen which doesn’t get above about 9 degrees even with the heating on! But lovely in summer!

Oh my! That’s something I have had enough of here, freezing my butt off in the winter. You aren’t there for the long term, are you?

We’re not, we are renting, although it’s such an amazing place to live I’m not in any hurry to move! We do have a wood burner and Gas heating which is quite unusual in a place like this I think, it just doesn’t make a difference in the kitchen! There used to be a Rayburn in there but it was removed before we moved in.. Boo! Xx
