We are absolutely loving the hot weather here at the sparklenest. We are lucky to live in an old stone cottage which stays pretty cool most of the time, so we can enjoy the outdoors and come in when it gets too warm!
Its far too warm to be cooking this week though, so last night I made a very simple Vegan Sunshine Rainbow Salad. Here is the recipe..
Cook and drain the pasta, chop all the veg, and mix together! Simple, delicious, and enough for lunch the next day. I served this up with some spicy bean burgers. We ate it
al fresco with a chilled glass of wine standing up in the kitchen as quickly as possible before munchkin complained too much about us eating…! But it was still delicious!
