It’s been a while since I baked cupcakes. Around 5 months, as whilst I was on maternity leave before munchkin arrived I was baking very regularly.. mainly so I could lick the spoon!
Wednesday was a rainy windy day, perfect for some cosy baking in the kitchen, so cupcakes were on the menu again!
I used the Vegan Vanilla Cupcake recipe from the food network.
For the icing
I mixed the wet ingredients together then added to the dry ingredients in the food processor. Then divided the mixture between 12 large cupcake cases and baked at 180 degrees for 25 minutes.
I then mixed the icing ingredients together by hand. The icing was very runny so next time I think I will add the almond milk more gradually!
The result.. a sweet, sticky, delicious cupcake…
Generally I try to avoid refined sugar, and these cakes have a lot.. but sometimes, you just need a treat!
