Vegan Chinese Saturday Night Takeaway

Some Saturday nights, or any night really, I just crave a Chinese takeaway. My absolute favourite is a fried rice dish, so I thought I would have a go at making my own, and I was delighted with how it turned out!


Ingredients (serves 2)

  • 1 large onion
  • 2 cloves of garlic
  • 160g tofu pieces
  • 1 red pepper
  • 1 green pepper
  • a handful of baby corn
  • 2 tbsp tamari
  • 1 tbsp sesame oil
  • 180g brown rice

Start by cooking your brown rice in the usual way.

Meanwhile, in a wok or large saucepan, add your sesame oil and fry your onion and garlic to soften for a few minutes. Add the peppers, then the baby corn and the tofu, and stir fry for around 7 minutes. Drain your rice, then add to the vegetable and tofu mixture. Splash in the tamari and mix together.

And that’s it – a quick, easy, vegan, healthy, and very delicious Chinese ‘takeaway’! You do need to wash up afterwards, that’s the only downside. Enjoy!
