I have started to make fruit smoothies to have with my lunch each day. They feel ever so indulgent as they are just fruit, and it’s fun to mix up different combinations to see what tastes and colours you can come up with! If I make a breakfast smoothie then I often add greens, or matcha powder, and whilst they are still delicious and incredibly healthy, they do often end up looking like green sludge!
On my last visit to the local fruit shop, these apricots caught my eye.
I made a very simple smoothie with them in the Nutribullet, simply containing
I was amazed by the colour of my smoothie – I’d call it ‘nature’s neon’!
And it was absolutely delicious.. summer in a glass!
