Vegan Chocolate Chip Cookie Dough Bites

I’ve been keen to make a ‘healthy’ sweet treat after my Vegan Vanilla Cupcakes that I made a few weeks ago. And I must say, whoever came up with the idea of using chickpeas to make cookie dough is a genius.

These dark chocolate cookie dough bites taste so sweet and decadent, and they are absolutely full of goodness! Rob arrived home when they were fresh out of the oven, and declared them ‘really  good’ – and I still haven’t told him what they are made from!


Vegan Chocolate Chip Cookie Dough Bites

  • 400g can of chickpeas, drained and patted dry
  • 2 tsp vanilla extract
  • 3 tbsp. almond butter
  • 1 tsp baking powder
  • 1/4 cup pure maple syrup
  • pinch of salt
  • 1/2 a large bar of good quality, dairy free dark chocolate, broken into small chunks

I simply put all of the ingredients except for the chocolate into the food processor, and whizzed up until a sticky dough formed. Then I stirred in the chocolate chunks. Next, I got my hands in to form the mixture into balls. Beware the mixture is very sticky! I made six cookie dough bites from these quantities, which were pretty generous in size.

Pop the cookie dough bites into the oven at 180 degrees centigrade, and bake for just 10 minutes.
