Tomberry Salad

This colourful salad was the first dish I had when I finished my 5 days of juicing last week. I actually juiced for breakfast and lunch of the 6th day, and made this salad for dinner. It was so good after 5 days of liquid, even if the liquids were delicious juices!

I’ve only just discovered tomberries – they’re tiny tomatoes, the size of blueberries, and they’re so sweet and scrummy. I finished the rest of the punnet after I had made this salad as they are so moreish! Highly recommended.

Tomberry Salad

Ingredients

  • 150g mix of spelt and wheat berries (you could also use 150g quinoa)
  • 50g haricot beans
  • Handful of baby spinach leaves
  • 1 carrot, grated
  • 75g tomberries – or cherry tomatoes would also work if you can’t find tomberries
  • 1/2 cucumber, chopped
  • A handful of pine nuts

For the dressing

  • 1 tablespoon tahini
  • 1/2 tablespoon lemon juice

    This sounds and looks delicious! I’ve never heard of tom berries before – will have to see if my supermarket stock them! Well done for juicing, I tried it once and didn’t even last a day :) #foodpornthursdays

      I found them in Sainsburys, I haven’t seen them anywhere else, I hope you find some :-)
