Vegan Chocolate Cupcakes

This week is National Cupcake Week, which gave me the perfect excuse, if any was needed, to try out a new recipe for vegan chocolate cupcakes. I’ve made vegan vanilla cupcakes before, which were good – but these chocolate cakes are next level amazing. I really am so pleased with them. There isn’t too much oil in the recipe and the sponge is a perfect mix of fluffy and chocolatey – in my opinion anyway!

Vegan Chocolate Cupcakes

Ingredients

  • 200g plain flour
  • 200g caster sugar
  • 3 tbsp. raw cacao powder (or you could use 4 tbsp. of cocoa powder, cacao is stronger so not as much is needed)
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 5 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 250ml water

For the frosting

  • 300g icing sugar
  • 100g dairy free butter substitute (I used vitalite)
  • 30ml almond milk or other milk alternative
  • 1 tablespoon raw cacao powder
  • Vegan hundreds and thousands

Vegan Chocolate Cupcakes

  • Preheat your oven to 180 degrees centigrade (350 fahrenheit)
  • Mix all of the sponge ingredients together well, using an electric whisk or by hand
  • Pour the mixture into 12 muffin cases
  • Bake for around 15 minutes, or until well risen and a skewer dipped into the middle of a cake comes out clean.
  • Leave cakes to cool on a wire rack
  • For the icing, mix together all ingredients by hand, and then spoon onto each cooled cupcake.
  • Decorate with hundreds and thousands
  • Eat, share, and enjoy!

    Those are so cute! I especially like the napkin under them in a photo. I would love to find those at a tea party! I’m a huge chocolate-lover and my sibling is vegan. So, I may just have to give this a try when they visit. :)
