I was very excited when Indigo Herbs very kindly sent me a parcel of amazing ingredients to create some delicious recipes with. I absolutely love making desserts and treats with healthier ingredients, especially when they taste just as indulgent as the original! Do you remember making crispie cakes when you were little? A giant bar of melted chocolate, mixed with some rice crispies, then left to set in the fridge. Delicious!
I took my healthier alternative to a friend’s house last weekend, and we enjoyed a cake each with a cuppa. ‘What did you say was in these again?’ she said as we licked the melty chocolatey goodness off our fingers… ‘no refined sugar or dairy at all?’
Ingredients – makes 6 cakes.
1/2 cup of coconut oil
1/2 cup of carob powder
1 tablespoon raw cacao powder
3 tablespoons organic raw agave syrup
1 teaspoon vanilla powder
1/4 cup almond butter
1 cup crispy cereal. For my cakes, I used Nature’s Path Mesa Sunrise cereal, which is available from the ‘free from’ section of most supermarkets. It’s gluten free, and also contains puffed quinoa.
Simply mix all of your ingredients, apart from the cereal, together in a large bowl. When you have a lovely smooth chocolatey mixture, then add your cereal, and mix until completely covered.
Prepare a muffin tin with 6 cupcake cases, and spoon the mixture equally between each case. Then pop the tray into the fridge for a couple of hours until set.
Then enjoy your cake with a lovely cup of green tea, for a completely guilt free, indulgent treat!
So what makes these cakes so ‘super’?
Carob powder is a sweet tasting alternative to chocolate. It’s high in fibre, calcium, vitamin B2 and potassium and has also been proven to assist with calming stomach problems.
