Making breakfast beautiful with La Juniper – and delicious homemade granola

A dinner party, coffee, tea,

Since I’ve been on maternity leave and have had the luxury of time in the morning, preparing breakfast (or ‘brexit’ as my 2 year old calls it) has become one of my favourite parts of the day. I go all out, using up more pots and pans than I possibly need, and making a mess all over the kitchen. We have porridge, pancakes topped with yoghurt and fruit, toast with pan fried cherry tomatoes and balsamic vinegar.. but one of my favourite, most comforting breakfasts is my homemade granola. It’s so simple to prepare, and can be made in the evening and kept for the days ahead. (I’m not sure how long, it always gets eaten up pretty quickly here!)

Nourishing Homemade Granola

 

Now, didn’t I mention homemade granola? As I said, this is such a simple recipe – and your house will smell amazing while it is baking! It’s perfect with almond milk and topped with fresh fruit, or sprinkled on yoghurt or ice cream. I hope you enjoy!

 

 
Nourishing Berry and Seed Granola - Vegan

Category: Breakfast

Cuisine: Vegan

Yield: 6

Serving Size: 180g

Calories per serving: 362

Fat per serving: 15.6

Saturated fat per serving: 9.7

Carbs per serving: 46.1

Protein per serving: 6.7

Fiber per serving: 5.8

Sugar per serving: 17.6

Nourishing Berry and Seed Granola - Vegan

Ingredients

  • 300g rolled oats
  • 140ml maple syrup
  • 100g mixed berries and seeds
  • 4 tbsp coconut oil

Instructions

  1. Heat oven to 170 degrees
  2. Gently melt the coconut oil on the stovetop, then mix together with all the other ingredients in a large bowl until the oats, berries and seeds are well coated with the maple syrup and the coconut oil.
  3. Spread the mixture onto a lightly greased baking sheet
  4. Bake in the centre of your oven for about 20-30 minutes, stirring the mixture up every 5 minutes or so until your granola mix is golden brown,

    That does look delicious! I’m so lazy so I just buy Jordans at the shop, which does the job just fine! I love their Strawberry one. I wonder what it would be like to freeze dry strawberries at home? This could be something for me to try out :)

    This looks absolutely delicious. Breakfast is definitely my favourite meal. I would say I’d try to make this but I’m spoilt by the ease of either sainsbury’s or the co-op’s own.

    Here we all were stressing about Brexit, debates on TV and radio; yet all the time you had it sussed! Excellent work. There is something rather lovely about having a relaxing breakfast with good food, but unfortunately not something I partake in often. I really love the La Juniper kitchenware, simply gorgeous.
