Mint Choc Chip Nice Cream with Peppermint Vitality Oil

Last week I managed to over-buy bananas again. Sometimes my toddler loves them and will have one a day, other times he isn’t fussed, so I was left with a bowl of over ripe bananas. I often make a banana loaf with these, but this time I thought I’d try to make some ‘nice cream’ which is something I’ve wanted to try for ages.

A great thing to do with over ripe bananas is to peel them, chop them up, and put them in the freezer. They’re great for adding to smoothies too. I’ve whizzed up frozen bananas in the blender before, which give a lovely ice cream texture on their own, but haven’t tried adding anything else before.

I’ve got a whole set of Young Living Vitality Oils, which are safe to be taken internally, and so far I’ve made a vegan lemon cake using the lemon oil. This time I thought I’d try the peppermint. Peppermint oil is great for soothing a troubled tummy, and giving a little burst of energy, and my mint choc chip nice cream did just that! I ate mine as an afternoon snack on a work day before I picked the babies up from nursery, and it really helped give me a boost to get through their tea, bath and bed – which is always a bit of a challenge with two overtired little boys!

As well as bananas, this recipe contains spinach and avocado, which are packed with vitamins and minerals. Instead of chocolate chips I used organic cacao nibs, which are a great energy booster and contain fibre, antioxidants, potassium and magnesium.

Mint Choc Chip Nice Cream with Peppermint Vitality Oil


  • 1 and a half frozen bananas
  • Half an avocado
  • Generous handful of spinach
  • Drop of peppermint vitality oil (if you don't have this, you could use a sprig of fresh garden mint)
  • Half a teaspoon of vanilla extract


  1. Simply add all of the ingredients into a blender or nutibullet, and blend until nice and smooth and creamy!

I hope you enjoy the recipe. If you don’t have the peppermint oil you could add a sprig of fresh mint, or some peppermint extract in it’s place.
